Perfect parsnips

Tristan Welch shares his favourite way of serving parsnips at Christmas - roasted with thyme, parmesan and English mustard

Ingredients

  • 1 bags parsnips
  • 15 g thyme
  • 1 tsp English mustard powder
  • 2-3 tbsp rapeseed oil
  • 2-3 tbsp freshly grated parmesan

Method

1. Preheat the oven to 200C/gas 6. Peel the parsnips and slice them into thick batons. Blanch in a pan of boiling, salted water for 2 minutes and then drain them well.

2. Scatter the parsnips over a baking tray, top with the thyme leaves, mustard and oil, and rub together to combine. Sprinkle over the parmesan.

3. Roast for about 20 minutes, or until golden-brown and crisp. Serve hot.
