Pesto potatoes

Create potatoes with real pizzazz by simply using a little pesto and Jo Pratt's swift but scrumptious recipe

Ingredients

  • 500 g new potatoes
  • flakes sea salt
  • 1 tbsp olive oil
  • 1 tbsp pesto

Method

1. Set the oven to 180°C/gas 4. Place the potatoes in a roasting pan and add a good pinch of salt and about 1 tablespoon of olive oil. Give the tray a good shake around and place in the oven for 20 minutes.

2. Remove the potatoes from the oven and add the pesto. Shake the potatoes around until they are coated. Cook for a further 10-15 minutes, or until the potatoes are cooked through and golden (the exact time will depend on the size of the potatoes).
