Plantain chips

Plantains can be used much like potatoes and make excellent chips, as demonstrated by Aaron Craze

Ingredients

  • 6 ripe plantains
  • 200 g polenta
  • 2 tbsp olive oil

Method

1. Preheat the oven to 200C/180C fan/gas 6. Peel the plantains and cut into chips. Place the polenta in a bowl, add the plantain and toss to coat.

2. Line a large baking tray with non-stick paper and spread the plantain out on it. Drizzle the olive oil and season well with salt.

3. Bake for 10 minutes or until the chips are golden and crisp. Serve on their own with a spicy dipping sauce, or as an accompaniment to Fried Fish.
