Polenta-crusted Fish

Ingredients

  • 8 x 100 g halibut fillets, or sole fillets
  • 2 tbsp quick-cook polenta
  • 1/4 tsp ground coriander
  • 1/4 tsp celery seeds
  • 1/4 tsp paprika
  • 1/4 tsp garlic salt
  • 1/4 tsp dried onion powder
  • 1/4 tsp freshly ground black peppercorns
  • pinches chilli powder

Method

1. Put the polenta into a bowl and add the spices.

2. Press the mixture firmly into the fish and grill for 3-4 minutes on each side, until cooked through and golden. Serve straight away.
