Pollo alla pizzaiola (chicken breast in pizza sauce)

A simple tomato sauce adds colour and flavour to fried chicken in Gino D'Acampo's quick and easy recipe

Pollo alla pizzaiola (chicken breast in pizza sauce)

  • 6 tbsp Italian olive oil
  • 2 chicken breast fillets, skinless
  • 2 clove garlic, finely chopped
  • 600 g canned chopped tomatoes
  • pinch of dried oregano
  • salt, and freshly ground pepper
  • 1 ball mozzarella, drained and finely sliced
  • 6 slices of ciabatta bread, toasted


1. Heat the olive oil in a heavy-based frying pan.2. Add the chicken and garlic and fry, stirring often, until the chicken is golden, around 10 minutes.3. Tip in  the canned tomatoes, season with oregano, salt and freshly ground pepper and cook for 5 minutes.4. Place 3 slices of toasted ciabatta on each serving plate. Top each serving with a chicken breast fillet.5. Cover each chicken breast with a few slices of mozzarella, then spoon over the tomato sauce. Serve straight away.
