Pork and bacon wraps

One for pork lovers here, as Rachael Bermingham and Kim McCosker takes succulent pork fillet and wraps it in bacon, for a tasty snack

Ingredients

  • 2 pork fillet
  • 1/3 cup basil pesto
  • 4 rashers bacon, rindless
  • 1/2 cup apple sauce

Method

1. Cut pork fillets in half.

2. Spread outside with 2/3 of basil pesto.

3. Wrap bacon around fillets to cover outside.

4. Bake in 180C oven for 25-30 minutes or until pork is cooked.

5. Mix remaining pesto with apple sauce and heat until almost boiling, serve with fillets.
