Pork Faggots with Shallot and Apple Gravy

For the shallot and apple gravy

  • 3 shallots, peeled and sliced
  • 1 Granny Smith apple
  • 2 litres fresh apple juice
  • olive oil

For the faggots

  • 450 g minced pork
  • 2 onions, finely chopped
  • 100 g breadcrumbs
  • 75 g suet
  • 2 tsp sage, chopped
  • salt and black pepper
  • olive oil

For the dressed green beans

  • 100 g green beans
  • 100 ml cider vinegar
  • 200 ml virgin olive oil
  • salt and black pepper

For the salad

  • 100 g bulls blood lettuce
  • 100 g dandelion leaves


1. Preheat the oven to 180C/ gas 5.

2. For the shallot and apple gravy: heat a little olive oil in a frying pan and fry the onions slowly. Once the onions begin to brown, add the apple slices and fry until they begin to colour.

3. Pour over the apple juice to cover the apples and onions, and cook on a low heat for about an hour, continually topping up with apple juice as it reduces. Keep scraping the bottom of the pan to add colour to the gravy. The onions and apples should be soft and browned.

4. For the faggots: Meanwhile, mix the minced pork and onions together in a bowl. Add the breadcrumbs, chopped suet, sage and season with salt and quite a bit of pepper.

5. Shape the mixture into small golf ball sized balls - if the mixture is too wet more breadcrumbs should be added.

6. Heat a little olive oil in a frying pan and fry the faggots so that they colour all over. Transfer the faggots to a greased baking tray and put them in the preheated oven for 30 minutes or until the faggots begin to colour.

7. For the dressed green beans: blanch the green beans in salted water for about 8-10 minutes, then remove and split open.

8. In a bowl, whisk together the cider vinegar, virgin olive oil and salt and pepper. Pour most of the vinaigrette over the green beans.

9. Serve the gravy on a plate with the faggots place on top of a bed of green beans and the salad leaves on the side. Drizzle any remaining vinaigrette over the rest of the salad dressing.
