Ingredients

  • 500 g minced pork
  • 1 red pepper, finely chopped
  • 1 small leek, finely chopped
  • large bunch of coriander, finely chopped
  • 1 tsp thyme, leaves only
  • 4 cloves garlic, finely chopped
  • 1 stem lemongrass, finely chopped
  • 3 tsp ground cumin
  • 1 tsp cumin seeds
  • 1 egg
  • 50 g flour
  • black pepper
  • 5 tbsp olive oil, for frying

Method

1. Put all the ingredients in a large bowl and mix thoroughly. Season with salt and freshly ground black pepper.

2. Shape into palm sized patties.

3. Heat a little olive oil in a frying pan over a medium heat and fry the patties, a few at a time, 3-4 minutes on each side, until cooked through and golden. Serve immediately.
