Potted Christmas pudding and wensleydale spread

  • 150 g christmas pudding, left over
  • 150 g wensleydale cheese, finely grated
  • 150 g soft cream cheese
  • 1 tsp cayenne pepper
  • 4 whole star anise
  • 50 g unsalted butter, melted


1. Tip the pudding into a bowl and mash well with a fork. Add both the cheeses and the cayenne pepper and mix together until well-blended. If you prefer a smooth texture, do this in a food processor. 2. Spoon the mixture into four small pots or ramekins and smooth over the surface. Push a star anise into the surface of each pot. Pour round the butter, tilting the pot so the surface is evenly covered. 3.Leave to set, then chill until ready to serve. Serve with hot toasted bread or bagels. It will keep in the fridge for about a week.
