Prawn and Mozzarella Croissants

Prawn and Mozzarella Croissants

Ingredients

  • 1 tbsp olive oil
  • 1 clove garlic, chopped
  • 1 red chilli, chopped
  • 1 shallot, chopped
  • 1 tsp finely chopped ginger
  • squeeze lime juice
  • 200 g king prawns, shelled, cooked
  • 1/2 tbsp chopped coriander
  • 500 g buffalo mozzarella, torn into small pieces
  • 4 butter croissants

Method

1. Preheat an oven to 180C/gas 4. Heat the olive oil in a frying pan and cook the garlic, chilli, shallot and ginger together for 30 seconds. Add a squeeze of lime juice followed by the prawns and chopped coriander. Take the pan off the heat and add the cheese.

2. Split the croissants and fill with the prawn filling. Warm through in the oven for about 3-4 minutes. Serve straight away.
