Prawns in a spicy, sweet and sour curry

This seafood dish with tamarind and coriander is a real favourite with Miss Masala

Prawns in a spicy, sweet and sour curry

  • 4 cloves garlic
  • 1 tsp cumin seeds
  • ' tsp coriander seeds
  • 4 dried red chilli
  • 1 ' tsp turmeric
  • 2 tbsp oil
  • 1 medium onion
  • 20 raw shelled king prawns
  • 1 tbsp tamarind paste
  • 1 tbsp muscovado sugar
  • 25 g coriander, roughly chopped


1. Peel the garlic cloves and then, using a hand blender, grind them to a smooth paste with the four spices and half a mug of water.

2. Warm the oil in a medium pan set over a high heat. When the oil is heating, peel and chop the onion, then add to the pan and fry for about 5 minutes, or until golden brown. Next, add the blended masala and stir with the onions for a further 5 minutes.

3. Now chuck in the prawns and cook for 2 minutes until they have turned pink. Mix in the tamarind paste, the sugar, chopped coriander and salt to taste.
