Preserved Pears in Spiced Red Wine

Lotte Duncan's recipe for pears in a rich wine syrup makes a colourful addition to any festive buffet table

Preserved Pears in Spiced Red Wine

  • 900g firm dessert pears, peeled, cored and quartered
  • 100 g raisins
  • 300 ml white malt vinegar
  • 300 ml red wine
  • 450 g granulated sugar
  • 1 cinnamon stick
  • 15 whole cloves
  • small piece of fresh ginger
  • 6 juniper berries, squeezed between the fingers
  • strip of orange rind


1. Place the pear quarters in a saucepan and cover with boiling water. Simmer gently until almost tender. Drain.

2. Add the raisins to another pan, then pour in the vinegar, red wine, sugar, cinnamon, cloves, ginger root, juniper berries and orange rind.

3. Bring to the boil and simmer for 5 minutes. Add the pears and cook until the pears are translucent.

4. Pack the pears into hot, sterilised jars and cover with the syrup. Cover the pears with waxed paper discs, cool and cover tightly. Store in a cool dry place.
