Purple Figs with Parma Ham, Rocket and Minted Yogurt

Purple Figs with Parma Ham, Rocket and Minted Yogurt

Ingredients

Main

  • 8 figs, purple
  • 225 g Parma ham
  • 80 g wild rocket
  • 3 tbsp extra virgin olive oil

For the minted yoghurt

  • 300 ml Greek yogurt
  • 0.5 cucumber, finely diced
  • 5 g fresh mint, chopped
  • 1 pinches black pepper
  • 0.5 lemon juice

Method

1. Firstly, mix the yoghurt and cucumber together.

2. Add the mint, seasoning and lemon juice to taste.

3. Slice the figs and arrange them in the centre of each of four plates. Arrange the Parma ham around the edges.

4. Arrange the rocket around the edges and drizzle with olive oil.

5. Serve with the yoghurt dressing.
