Quick pappardelle

Easy and tasty, Adam Swanson rustles up pasta tossed in olive oil, rocket and walnuts

  • 375 g fresh egg pappardelle
  • 240 ml olive oil
  • 65 g crushed walnuts
  • 150 g fresh rocket
  • A large handful of parsley, chopped
  • 100 g parmesan


1. Cook pasta according to packet directions. Heat a pan over medium heat and add the olive oil.

2. Add walnuts to the pan and saute for 3 minutes or until walnuts have lightly browned. Stir the rocket through the walnuts, turn down the heat. Add the parsley, then pasta and mix.

3. If needed, add an extra cup olive oil. Season to taste with salt and cracked black pepper. Serve with shavings of parmesan cheese
