- 1 heads radicchio, split into separate leaves
- 5 tbsp extra virgin olive oil
- 1 tbsp white malt vinegar
- 1 tbsp balsamic vinegar
- salt and black pepper
- 2 eggs, hard boiled
1. Put the radicchio leaves into a bowl and dress with olive oil, both vinegars and season.
2. Using the back of a spoon press the hard boiled eggs through a sieve over the top of the leaves.
