Radicchio Mimosa

Ingredients

  • 1 heads radicchio, split into separate leaves
  • 5 tbsp extra virgin olive oil
  • 1 tbsp white malt vinegar
  • 1 tbsp balsamic vinegar
  • salt and black pepper
  • 2 eggs, hard boiled

Method

1. Put the radicchio leaves into a bowl and dress with olive oil, both vinegars and season.

2. Using the back of a spoon press the hard boiled eggs through a sieve over the top of the leaves.
