- 4 tbsp extra virgin olive oil, preferably estate-bottled
- 1 tbsp lemon juice
- 100-150g porcini, very thinly sliced
- freshly ground salt and black pepper
1. Whisk the olive oil and lemon juice until smooth.
2. Put the porcini slices in a shallow bowl. Pour over the dressing and toss carefully.
3. Arrange on serving plates. Sprinkle with sea salt and a scrunch of black pepper.
