Red Lentil Soup

Red Lentil Soup

Ingredients

  • 2 carrots, chopped
  • 2 stalks celery, chopped
  • 1 red pepper, chopped
  • 1 onion, chopped
  • 1 clove garlic, finely chopped
  • 175 g Puy lentils
  • freshly ground black pepper
  • 1 pinches ground cinnamon
  • 1 tbsp oregano
  • 1 tsp curry powder
  • 1 small bunches parsley, chopped

Method

1. Put the carrots, celery, red pepper, onion and garlic together in a saucepan and cook over a gentle heat for 4-5 minutes, until softened.

2. Tip in the lentils and pour in enough water to cover.

3. Add the black pepper, cinnamon, oregano and curry powder and bring to the boil.

4. Reduce the heat and simmer for 45 minutes. Stir in the parsley and serve.
