Red Onion Relish

Ingredients

  • 60 ml vegetable oil
  • 2 red onions, sliced
  • 4 cloves garlic, crushed
  • 1/2 tsp dried red chilli flakes
  • 1 cm ginger, finely diced
  • 50 g brown sugar
  • 30 ml balsamic vinegar
  • grated zest of 1 oranges
  • 60 ml brown ale
  • 1 tsp soy sauce
  • 25 g sultanas
  • 1 small tomato, skinned, de-seeded, diced
  • 1/2 mango, diced

Method

1. Heat the vegetable oil in a small heavy-based saucepan. Add the onion and cook over a high heat for 1 minute, add the garlic, chilli flakes, ginger and cook for a further minute.

2. Add the sugar and cook for 1-2 minutes. Add the vinegar with the orange zest, then the brown ale and soy sauce.

3. Cook, stirring now and then, until reduced by half. Finally add the sultanas, mango, tomato flesh and season with salt and freshly ground black pepper.
