Rib-Eye Steak with Garlic and Thyme

Rib-Eye Steak with Garlic and Thyme

For the rib-eye steak:

  • 1 tbsp oil
  • 1 clove garlic, crushed
  • sprig thyme
  • 400 g rib-eye steaks, on the bone

For the new potatoes:

  • 200 g new potatoes, peeled
  • 25 g butter
  • 1 tbsp oil
  • 2 shallots, peeled and chopped
  • small bunch tarragon, chopped
  • salt and black pepper


1. For the rib-eye steak: pre heat the oven to 220C / gas 7.

2. Heat the oil, garlic and thyme in a frying pan and sear the steak for about a minute on each side. Transfer to the preheated oven and cook for ten minutes, or to your liking.

3. For the new potatoes: bring a pan of water to a simmer and blanch the peeled potatoes for 7 minutes. Drain the potatoes.

4. Heat the butter and oil in a separate pan then transfer the potatoes and lightly fry for a couple of minutes. Add the shallots, parsley, tarragon and cook for a further five minutes.

5. Season both the steak and the potatoes and serve.
