For the dressing

  • 1-2 tbsp white wine vinegar
  • 4 tbsp olive oil
  • 1 tsp English mustard powder
  • 2 tsp caster sugar
  • salt and black pepper

For the rice salad

  • 200 g basmati and wild rice, cooked according to packet instructions
  • 1 red peppers, finely chopped
  • 4 spring onions, finely sliced
  • 50 g raisins
  • 50 g flaked almonds

Tips and Suggestions

Try making the dressing without adding any salt. For more information on healthy eating see eatwell.gov.uk.


1. For the dressing: put all of the dressing ingredients together into a jar, screw the lid on tightly and shake vigorously until well combined. Taste for seasoning and adjust if necessary.

2. For the rice: mix all of the rice ingredients together, pour over the dressing and stir together.

3. Transfer to a large serving dish and serve.
