- 2-bone forerib of beef, fat on

1. Preheat oven to 240C/220C fan/gas 9. Coat the beef in olive oil and season with a generous amount of salt and pepper. Place in a roasting tray and cook in the oven for 20 minutes to crisp up the skin.
2. Turn the oven down to 200C/180C fan/gas 6, and cook for a further 55 minutes. Ensure a good 10-15 minute rest before carving.
