Rocket Salsa Verde

Ingredients

  • 85 g rocket
  • 2 tbsp capers, drained, rinsed and finely chopped
  • 25 g parmesan, grated
  • 15 ml white wine vinegar
  • 90 olive oil
  • black pepper

Method

1. Place the rocket, capers, Parmesan, vinegar and olive oil in a food processor.

2. Blend together until well-mixed but retaining some texture.

3. Season with salt and freshly ground pepper. Serve.
