Rustic garlic and bread soup

Full of fabulous flavour and great for everyone but vampires, Frank Bordoni's gusty garlic soup is a 'must-make' you're sure to love!

Rustic garlic and bread soup

  • 1 litres water
  • 1 tbsp olive oil
  • 10 cloves garlic, peeled and crushed
  • 1 pinches black pepper
  • 2 slices ciabatta bread, stale
  • 2 eggs
  • 1 tsp white wine vinegar


1. Bring the water to boil and add the oil and garlic. 2. Cook for 10 minutes, and then season to taste with salt and freshly ground black pepper. 3. Add the bread. 4. Simmer for another five minutes or until the bread has broken down and thickened the soup. 5. Whisk the two eggs with the vinegar until smooth and add slowly to the soup stirring vigorously all the time, taking care not to allow the soup to boil again or the eggs will split. 6. Serve immediately.
