Salad of Roast Beef, Figs, Rocket and Parmesan

It's summertime and the cooking is easy... when you get the shopkeeper to do it for you, as in this super-fast gourmet salad

Salad of Roast Beef, Figs, Rocket and Parmesan

Ingredients

  • 6 large slices roast beef
  • 2 fresh figs
  • 20 g rocket
  • about 10 parmesan shavings
  • 2 tsp extra virgin olive oil
  • pepper

Method

1. Bring the roast beef to room temperature and arrange 3 slices on each serving plate. Slice the figs and lay them over the beef. Scatter with the rocket leaves and the parmesan shavings.

2. Drizzle each salad with 1 tsp olive oil and season generously with black pepper before serving.
