Salmon pâté

This super-tasting, oh-so-simple salmon pâté from Janet Brinkworth and Dan Oliver makes a really special but speedy snack or starter

Ingredients

  • 400 g tinned red salmon, drained
  • 3 tbsp crème fraîche
  • 2 gherkins, chopped
  • 2 tbsp mayonnaise
  • salt, and freshly ground black pepper

Method

1. Remove the bones and skin from the salmon and place it into a food processor with the remaining ingredients. Blitz carefully until the mixture forms a course paste (take care not to process the mixture for too long, it will simply develop an unappetizing sludgy texture).

2. Season to taste with salt and freshly ground black pepper and refrigerate until required.

3. Serve with crusty bread.
