Salt-baked bay leaf potatoes

Salt-baked bay leaf potatoes

  • 4 large baking potatoes
  • 4 large bay leaves
  • 500 g coarse sea salt
  • butter, to serve


1. Preheat oven to 180C/160C fan/Gas 4.

2. Place the potatoes on a board and make a lengthways cut two-thirds of the way through each one, being careful not to cut the potato in half. Slide a bay leaf into each slit.

3. Scatter a layer of sea salt in a baking dish. Place the potatoes cut-side up on the salt. Bake for 1-1½ hours, depending on the size of the potatoes, until they are crisp on the outside and soft in the middle.

4. Remove the cooked potatoes from the oven and, protecting your hands with oven mitts or similar, carefully ease them open along the slit. Add some olive oil or butter and serve immediately.
