Ingredients

  • 50 ml vegetable oil
  • 1 tbsp garlic, finely chopped
  • 1 ½ tbsp finely chopped shallots
  • 100 g chilli paste
  • 100 g shrimp paste
  • pinches palm sugar or muscovado sugar, to taste

Method

1. Heat the oil in a wok and add the garlic, shallots and chilli paste. Fry for 2-3 minutes, until fragrant, then add the shrimp paste and a pinch of salt and sugar.
