Scallops with Balsamic Dressing

Bryn Williams' simple starter allows the subtle flavour of the scallops to do all the work

Scallops with Balsamic Dressing

  • splashes olive oil
  • 3 scallops, shelled
  • slices lemons
  • olive oil
  • mixed salad leaves, to serve

For the dressing

  • 50 g balsamic vinegar
  • 100 ml olive oil
  • salt and black pepper


1. Heat a little olive oil in frying pan and sear the scallops for approximately a minute on each side.

2. For the dressing combine the balsamic vinegar and olive oil in a bowl and whisk.

3. When the scallops are seared, squeeze over the slice of lemon.

4. Serve the scallops with a few salad leaves and the dressing drizzled on top.
