Ingredients

For the dressing

  • 1 tbsp balsamic vinegar
  • 1 tsp honey
  • 3 tbsp olive oil

For the salad

  • 1 round lettuce, shredded
  • 2 spring onions, finely sliced
  • 1 small handfuls parsley, chopped
  • 200 g cooked and peeled prawns
  • 150 g cooked mussels

Method

1. For the dressing: Heat the dressing ingredients in a small pan until it comes to the boil and simmer for 5 minutes, stirring regularly until combined and slightly sticky.

2. For the salad: Place the lettuce, spring onion and parsley in a serving dish. Heat the oil in a frying pan and gently fry the seafood for 3-4 minutes to warm them through. Tip onto the salad, then pour over the dressing.
