Seared Chicken with Tomatoes and Asparagus

Ingredients

  • 4 x 175 g chicken breasts
  • 1 red onion, finely sliced
  • finely ground black pepper
  • 1 pinches dried oregano
  • 1 tsp garlic salt
  • 6 large tomatoes, chopped
  • 2 leeks, finely sliced
  • 1 clove garlic, crushed
  • 4 asparagus
  • 12-18 basil

Method

1. Place the chicken into a frying pan and spray with low-fat spray.

2. Add the red onion, black pepper, oregano and garlic salt.

3. Cook for 5 minutes or so, over a moderate heat, until golden.

4. Turn the chicken over and cook for 5 minutes more.

5. Add the tomatoes, leeks and fresh garlic. Cover and simmer for a further 4-5 minutes.

6. Stir in the asparagus and basil, heat through and serve.
