Seared chilli peppercorn tuna

Peppercorns and chilli flakes add a piquant simple yet stylish recipe for seared tuna, served on a bed of noodles

Seared chilli peppercorn tuna

  • 1 tbsp chilli oil
  • 1 lemon juice
  • 450 g tuna steaks, cut into 3 steaks
  • 3 tbsp black peppercorns, crushed
  • 3 tbsp dried red chilli flakes
  • 1 tbsp olive oil


1. Whisk the chilli oil and lemon juice together in a bowl then pour into a shallow dish. 2. Toss the tuna in the chilli oil mixture. Mix the peppercorns and chilli flakes together in a bowl. Place the tuna in the peppercorn mixture and turn to coat lightly. Leave to rest for 10-15 minutes. 3. Heat a frying pan until just smoking, then add in the olive oil. Place the tuna into the pan and fry for 30 seconds on each side. 4. Once seared on each side, remove and allow to rest for 2-3 minutes. Carve into 1cm thick slices and serve on a bed of noodles.
