Seared snapper with tropical salsa

Ingredients

  • 1 mango, diced
  • 1/4 pineapples, diced
  • 1 papaya, seeds removed and diced
  • 1/2 red onions, diced
  • 2 cloves garlic, minced
  • 1 jalapeƱo pepper, diced
  • 1 tbsp mint, chopped
  • small bunch parsley, chopped
  • 2 tbsp lemon juice
  • 2 tsp orange juice
  • 6 x 120 g snapper

Method

1. Mix all the ingredients except the fish in a large bowl.

2. Heat a non-sick frying pan over a high heat and cook the fish for about 2-3 minutes on each side. Serve hot from the pan with the salsa.
