Smoked cod roe on toast

Smoked cod roe on toast

Ingredients

Main

  • 25 ml double cream
  • 30 g butter
  • 1 lemons, juice
  • 1 tsp English mustard
  • 1 shallots
  • 1 bunches parsley, chopped
  • 1 smoked cod roe, whole
  • 2 slices good white bread, preferably bloomer
  • 1 pinches paprika

Method

1. Put the double cream, butter, lemon juice, mustard shallot and parsley into a saucepan and heat together. Bring to the boil and remove from heat.


2. Add the cod roe and mix thoroughly.


3. Toast the bread.


4. Spread a generous portion of the cod roe mixture over the toast and sprinkle with paprika.


5. Serve with a dressed rocket salad.
