Smoked salmon and bacon sandwich

Smoked salmon and bacon sandwich

  • 2 slices of wholemeal bread
  • 55 g cream cheese
  • 2 tsp diced red onions
  • 55 g smoked salmon, sliced
  • 2 tbsp mango chutney, puréed (in a blender)
  • 4 rashers of streaky bacon, cooked until crispy
  • tsp small capers, drained
  • 1 tsp snipped chives
  • freshly ground black pepper

Method

1. Spread both slices of bread with the cream cheese, scatter each slice with red onion then lay smoked salmon on top and drizzle with mango chutney.

2. Top this with the crispy bacon and capers. Finish with a scattering of snipped chives and season well. Eat as an open or closed sandwich.
