Smoothound with rosemary and anchovy butter

  • 2 x 150g fillets smoothound
  • small handful parsley
  • 6 tinned anchovies
  • vegetable oil, for frying
  • 2 cloves garlic
  • 150 g salted butter
  • 1 medium tomato, skinned and diced
  • 1 lemon


1. In a food processor blitz together the rosemary, garlic cloves, anchovies, buter and half the parsley until you have a paste.

2. Heat the vegetable oil in a pan. When hot add the fish. Cook for 3-4 minutes on each side then add the garlic and herb butter to the pan. As it melts spoon the sauce over the fish. Add the chopped tomato, remaining parsley and a squeeze of lemon and serve.
