Spaghetti with pecorino and butter

Theo Randalls cheesy pasta dish is a great mid-week standby with just three ingredients!

Spaghetti with pecorino and butter

Ingredients

  • 350 g spaghetti
  • 75 g unsalted butter
  • 150 g grated pecorino cheese

Method

1. Cook the spaghetti in a large pan of salted boiling water until tender, but still retaining some bite.

2. Drain and reserve a little cooking water. Melt the butter in a frying pan, add the pecorino and grind in plenty of black pepper. Add a little of the pasta cooking water.

3. Stir in the cooked pasta and toss well so that the spaghetti is coated in the cheese. Serve immediately with more black pepper.
