Ingredients

  • 1 chicken breast fillet, sliced into 4 even-sized strips
  • 1 tsp chilli powder
  • 1 tsp paprika
  • 2 tbsp coconut milk
  • 1 tbsp lemon juice
  • 1/2 tsp ground cumin
  • salt, and freshly ground pepper
  • vegetable oil, for shallow-frying

Method

1. Toss the chicken strips with the chilli powder, paprika, coconut milk, lemon juice, cumin, salt and freshly ground pepper in a bowl.2. Set aside to marinate in the refrigerator for 1 hour.3. Heat the vegetable oil in a frying pan. Add in the marinated chicken strips and fry for 2 minutes on each side, until cooked through. Serve at once.
