Spiced Crumbed and Baked Skate Wings

Ingredients

  • 4 x 175 g skate wings
  • 25 g butter
  • 4 tbsp olive oil
  • 1 small red chilli, chopped
  • 2 shallots, chopped
  • 2 cloves garlic, crushed
  • 1 tsp wholegrain mustard
  • 1 tbsp chopped parsley
  • 100 g fresh white breadcrumbs
  • salt and black pepper

For the lemon butter

  • 50 g butter
  • 1/2 lemon, juice only
  • 1 tbsp snipped chives
  • 1 tbsp chopped parsley

To serve

  • new potatoes
  • curly kale

Method

1. Preheat the oven to 180C/gas 4. Trim the skate wings to an even size. Heat the butter with 1 tablespoon of the olive oil in a frying pan. Fry the skate wings over a moderate heat until golden - about 3 minutes on each side.

2. While the fish is cooking, heat 1 tablespoon of the olive oil in another pan, and add the chilli, shallot and garlic. Fry gently until softened, but don't colour.

3. Remove from the heat, and add the mustard, parsley and breadcrumbs. Season well, and add the remaining olive oil.

4. When the skate has coloured on both sides take out and transfer to an ovenproof dish.

5. Sprinkle with the crumb mixture and bake for 15 minutes or until tender.

6. For the herb butter, heat the butter and cook until it takes on a golden colour. Remove the pan from the heat and add the lemon juice. Sprinkle over the herbs and serve with new potatoes and curly kale.
