Spiced pear compôte

Soft, sweet and warm, this lightly spiced and deliciously fragrant compôte makes cold nights in something to look forward to

  • 1 kg pears
  • pared rind of 1 oranges
  • 100 ml apple juice
  • 70 g caster sugar
  • 1 vanilla pod
  • � cinnamon sticks
  • 3 cloves
  • 15 g butter
  • Greek or sheep's milk yogurt


1. Peel and core the pears and cut into even sized chunks. Place in a large saucepan with the orange ring, apple juice and caster sugar and stir to combine.

2. Using a small, sharp, pointed knife, split the vanilla pod open lengthways and scrape the tiny black seeds from the pod into the pan. Add the pod husk and the remaining spices and mix thoroughly.

3. Cover and bring the mixture to a low boil. Cook gently for 10-15 minutes, stirring the mixture frequently with a wooden spoon to encourage the fruit to break down.

4. Remove the saucepan from the heat and allow to cool slightly. Discard the orange rind and large pieces of spices. Beat in the butter and serve warm or cold with yoghurt.
