Spiced Plum Clafoutis

Spiced rum-soaked plums and plump raisins cooked in a sweet golden batter make a fabulous fuss-free dessert from Mike Robinson

Spiced Plum Clafoutis

Ingredients

  • 400 g plums, halved
  • 200 g raisins
  • 25 ml rum
  • 1 tsp mixed spice
  • 3 eggs
  • 6 tbsp sugar
  • 3 tbsp flour
  • 1 pinches salt
  • 1/2 tsp baking powder
  • 400 ml milk
  • double cream, to serve

Method

1. Soak the plums and raisins in the rum for 2 hours.

2. Preheat the oven to 180C/gas 4. Lightly butter an ovenproof serving dish. Beat the eggs and sugar together until smooth.

3. Add the flour, salt and baking powder.

4. Stir in the milk, until the mixture forms a smooth batter.

5. Arrange the soaked fruit in the prepared dish and pour over the batter. Bake for 25 minutes, until golden and set. Serve hot, with double cream.
