Ingredients

  • 2 sticks rhubarb, chopped into chunks
  • 375 ml freshly squeezed orange juice
  • 2 large orange peel, pieces
  • 250 ml water
  • 75 ml dark rum
  • 100 g dark brown sugar
  • 4 gingernut biscuits, to serve

Method

1. Place the rhubarb, orange juice and peel, water, rum and sugar in a stainless steel pan. 2. Bring to the boil, reduce the heat and simmer over a low heat for 15 minutes until the rhubarb is tender. 3. Serve warm with ginger biscuits.
