Spiced Tea (Masala Chai)

Ingredients

  • 600 ml water
  • large pinch ground cardamom
  • 2 cloves, bruised
  • ½ tsp allspice berries
  • 1-2 blades lemongrass
  • tea leaves, to taste
  • milk, to taste
  • sugar, to taste

Method

1. Boil the water with the cardamom, cloves, allspice and lemon grass.

2. Simmer for a minute, before adding the tea leaves. Cook, over a low heat for 1 minute.

3. Pour in the milk, reheat, and strain into mugs. Serve piping hot with sugar, if liked.
