Spicy prawns with watercress is a simple spring recipe that's easy to make and healthy, great served with rice or noodles

  • 1 tsp oil
  • 6 spring onions, diagonally sliced
  • 5 cm piece of fresh ginger, grated
  • 1 tbsp medium curry paste
  • 250 g cooked peeled prawns
  • 85 g watercress
  • soy sauce, to serve


1. Heat a wok and add the oil. Stir-fry the onions and ginger until softened then stir in the curry paste and stir-fry for a further 30 seconds.

2. Stir in the prawns and reduce the heat. Cover and cook for 3 minutes then remove from the heat and stir in the watercress. Add a splash of soy sauce and serve with rice or noodles.
