- 800 g pumpkin or butternut squash
- 1/2 tsp ground cumin
- 1/2 tsp cayenne pepper
- 3 tbsp olive oil
1. Preheat the oven to 220C/gas 7.
2. Put the wedges of pumpkin or squash in a roasting pan and sprinkle with the cumin, cayenne pepper, sea salt and freshly ground black pepper. Drizzle with olive oil and toss until the pumpkin is well coated.
3. Roast for 30 minutes, or until the pumpkin is tender and caramelised.
