Spinach Thoran (Stir-fried Spinach with Coconut)

Lush green spinach, red chillies and creamy-white coconut make this simple side dish a perfect accompaniment to grilled fish

Spinach Thoran (Stir-fried Spinach with Coconut)

  • 3 tbsp coconut oil
  • 1 tsp mustard seeds
  • 1 tsp cumin seeds
  • 15 curry leaves
  • 2 dried chillies, whole
  • 4 shallots, sliced
  • 2 green chillies, shredded
  • 1 piece ginger, (3cm)shredded
  • 3 clove garlic, chopped
  • 400 g spinach leaves, shredded
  • 100 g grated coconut
  • 1 tbsp fresh lime juice

Tips and Suggestions

Grated coconut is sold from Indian grocers.


1. Heat the coconut oil in a large saucepan and toss in the mustard seeds, cumin seeds, curry leaves and red chillies. Stir and fry for about 15 seconds.

2. Add the sliced shallots, ginger and garlic to the pan and soften over a gentle heat for about 5-7 minutes.

3. Tip the shredded spinach leaves into the pan and fry for about 5 minutes until the leaves have wilted. Sprinkle in the coconut and sharpen with lime juice to taste. Serve hot with boiled rice.
