Spinach with chestnuts and smoked bacon

  • 3 tbsp olive oil
  • 3 rashers of streaky bacon, lardons
  • 25 g unsalted butter
  • 4 juniper berries, crushed
  • 900 g fresh spinach
  • 20 chestnuts, cooked and peeled
  • 1 pinches black pepper

Method

1. Heat the olive oil in a heavy based frying pan and fry the bacon lardons until they start to turn golden. 2. Add the butter, then the juniper, spinach and chestnuts and toss well. Cook for five to ten minutes to allow the flavours to infuse. Season to taste and serve immediately.
