Spotted dick

Mike Robinson adds a tot of dark rum and touch of cinnamon to his scrumptious version of this satisfying steamed pudding

  • 250 g shredded suet
  • 250 g self-raising flour
  • 500 ml milk
  • 100 ml dark rum
  • 200 g currants or raisins
  • 1 tbsp ground cinnamon
  • 1 tbsp ground ginger
  • 150 g caster sugar
  • 50 g butter


1. Stir the rum into the milk.

2. Mix all the dry ingredients together in a large mixing bowl until thoroughly combined. Pour in the milk and rum gradually until you have a thick dough. Make sure it is thoroughly mixed, then let it rest for 1 minute.

3. Rub the upper side of a tea towel with butter. Place the dough in a long 'sausage' down the centre of the cloth and roll it up. Tie the ends with string and place the pudding in a large steamer. Steam for 2 hours.

4. Unroll the spotted dick, take it to the table and flambé it with rum (ignite the rum in a small pan, using a long match until the flame disappears) in front of your guests, then cut into thick slices and douse each thoroughly with custard.
