Spotted Dick with Banana with Custard and Toffee Sauce

Spotted Dick with Banana with Custard and Toffee Sauce

  • 300 g plain flour
  • 10 g baking powder
  • 150 g shredded suet
  • 75 g sugar
  • 100 g currants
  • grated zest of 1 oranges
  • 150 ml milk
  • 1-2 chopped bananas

For the custard:

  • 6 egg yolks
  • 75 g sugar
  • 600 ml milk
  • 1 vanilla pod

For the toffee sauce:

  • 100 g dark brown sugar
  • 100 g butter
  • 100 g golden syrup
  • 100 ml double cream


1. In a large mixing bowl, mix together the flour, baking powder, suet, sugar, currants and orange zest.

2. Fold in the milk and banana.

3. Shape the pudding mixture into a roll, roughly 15cm by 5 cm. Loosely wrap the pudding in buttered greaseproof paper (allowing room for the pudding to rise), sealing the wrapping at each end.

4. Steam the pudding for 1 hour until cooked through.

5. Meanwhile, make the custard. Beat together the yolks and sugar in a mixing bowl.

6. Place the milk and vanilla pod in a saucepan and bring to the boil.

7. Strain the hot milk onto the beaten eggs and whisk together thoroughly.

8. Return the milk mixture to the saucepan. Cook over a very low heat stirring constantly until it thickens into custard and coats the back of a spoon.

9. To make the toffee sauce, place the sugar, butter and golden syrup in a saucepan.

10. Bring to the boil, remove from the heat and stir in the cream. Serve the pudding in slices, coated with warm custard and toffee sauce.
