Spring fruit cake

Paul Hollywood stirs up a little Springtime magic in this fabulous fruity cake, to be served slathered with good butter

  • 250 g butter
  • 250 g caster sugar
  • 7 eggs
  • 12 g baking powder
  • 355 g strong bread flour
  • 250 g strawberries, chopped
  • zest of 3 lemons
  • 4 plums, chopped


1. Set the oven to 180°C/gas 4. Thoroughly grease 2 loaf tins. Cream the butter and sugar together in a mixer, until light and fluffy. Beat in the eggs, one at a time, and then add the baking powder.

2. Add the flour and continue beating until the mixture forms a smooth batter.

3. Add the zest of the lemons.

4. Stop the machine and gently fold in the strawberries and plums.

5. Divide the mixture between the prepared loaf tins and bake for 30 minutes.

6. Serve with butter and a pot of tea.
