Stilton and bacon bread

Stilton and bacon bread

  • 500 g strong bread flour, plus extra for dusting
  • 500 ml warm water
  • 20 g fresh yeast
  • 1.5 tsp salt
  • 25 g stilton cheese, crumbled
  • 125 g bacon, chopped and fried
  • peppers, drizzled with olive oil and garnished with basil


1. Put 125g of the flour, 120ml of warm water and 15g of the yeast into a bowl and mix together by hand. 2. Whisk with a hand whisk for 5 minutes and then leave to rise in a warm place overnight.3. Add the remaining flour and yeast, 380ml of warm water and the salt, and knead well for 5 minutes before leaving to rest for 30 minutes.4. Tip the dough out onto a lightly floured surface and divide into two. 5. Mix half of the crumbled Stilton and half of the fried bacon into each portion of dough, then shape each portion into a round.6.Place the two rounds on a lined baking sheet and leave to prove for 1 hour.7. Preheat the oven to 200°C/gas 6.8. Dust the loaves with flour and bake for 30 minutes until risen and cooked through. 9. Once done, transfer to a wire rack to cool.10. Serve with roasted peppers in olive oil.
